Delicious Snickerdoodle Power Protein Smoothie with a dose of fiber and healthy fat from flaxseeds and almond butter. Perfectly sweet and creamy (with cauliflower and no banana) this protein shake tastes just like a fresh cinnamon cookie!
Ingredients
1cupAlmond Milk, 120ml, or other
⅔cupFrozen Cauliflower florets, 70g
½cupFrozen Zucchini chunks, Peeled, 56g
⅔scoopVanilla Protein Powder, 23g, about ¼ cup
2TbspNon-fat Greek Yogurt, about 28g
1½TbspFlaxseed Meal, about 10g
1TbspAlmond Butter
½tspCinnamon
Instructions
Blend frozen cauliflower, zucchini, protein powder, yogurt, flaxseed meal, almond butter, cinnamon and milk in blender or food processor until combined.
Add more milk to thin if needed.
Pour into a glass and serve.
Notes
To freeze cauliflower and zucchini:
Wash thoroughly and pat dry with paper towels to remove excess moisture.
Recommended: Blanch or steam cauliflower, or pulse in a food processor to make cauliflower rice.
Place in a single later in freezer-safe zipper bags and squeeze out as much air as possible.
Freeze for 1-2 hours.
If your protein powder is not sweet enough, add some extra powder (and milk to thin) or 0 calorie sweetener.
