A truly extremely easy Chocolate Chip Protein Skillet Cookie made with a few healthy ingredients. This chocolate chip protein cookie uses applesauce, almond butter and protein powder, has no sugar and is quite a low calorie recipe!
Ingredients
½cupVanilla Protein Powder, Whey-casein, 45g
¼cupPeanut Butter Powder, 24g
¼cupWhole Wheat Pastry Flour, 30g, See post for subs
1½TbspCoconut Flour, 10g
1TbspZero Calorie Brown Sugar Alternative, 12g
¾tspBaking Soda
½cupUnsweetened Applesauce, 120g see post for subs
1Egg, Room temperature
1Egg White
½TbspAlmond Butter, 8g
2TbspChopped Chocolate or Chocolate Chips, Sugar-free recommended below, about 28g
Instructions
Preheat oven to 350°F and grease an 8” cast iron skillet.
In a bowl combine vanilla protein powder, peanut butter powder, flour, coconut four, sugar alternative and baking soda.
In another bowl, place whisk applesauce, egg, egg white and almond butter.
Add dry mix into wet and gently fold until uniform.
Add in chocolate chips or chopped chocolate, reserving a few for the top.
Pour batter into greased pan/skillet and spread evenly with a spatula or back of a spoon.Top with remaining chocolate chips.
Bake for 11-12 minutes, a toothpick inserted into the center should come out with few crumbs attached.Cookie will cook more in skillet while cooling.
Let cool for about 10 minutes and serve warm with some vanilla (protein or banana) ice cream!
