With that molten chocolate filling, these Lava Brownie Protein Balls you will fall in love with! With oat flour and coconut flour, and sweetened with protein powder, these chocolate brownie protein balls are gluten free, sugar free and Vegan too! The perfect dessert, snack or post workout treat.
Ingredients
1TbspFlaxseed Meal, 7g
2TbspWater, 30g
⅓cupOat Flour, 30g, see post for subs
3TbspCoconut Flour, about 21g
¼cupChocolate Protein Powder, Whey-Casein, 22g
2TbspUnflavored Protein Powder, Whey-Casein, 11g
1½TbspUnsweetened Cocoa, 7-8g
1scoopUnflavored Collagen, 10g, see post for subs
3TbspAlmond Milk
1TbspCreamy Almond Butter, 16g
½ozChopped Chocolate, 14g, Sugar-free recommended
Instructions
Preheat oven to 350°F and line a baking tray with parchment paper.
In a large bowl, combine flaxseed meal and water and let rest 5 mins to thicken.
In a bowl, mix dry ingredients (chocolate protein powder, unflavored protein powder, oat flour, coconut flour, unsweetened cocoa powder and collagen) and mix.
Add in flaxseed mix, almond butter and milk - about ½ tbsp at a time - and mix to form a tick batter.Add more milk 1 tsp at a time if it is too dry, coconut flour if too wet.
Divide mix into 9 portions.Roll into balls, flatten into discs, place chocolate chips in, cover and roll into ball again.
Bake 8-9 minutes; Batter should be cooked on the outside.
