A giant Single Serving Chocolate Protein Cookie made with oat flour, greek yogurt and protein powder. This healthy single serve protein cookie is gluten free, sugar free, oil free and egg free; Easily Vegan and a great post workout treat or healthy dessert.
Ingredients
¼cupOat Flour, 22g, see post for subs
2TbspChocolate Protein Powder, about 11g
1TbspUnsweetened Cocoa Powder, or Cacao Powder, 5g
1TbspPeanut Butter Powder, 6g
¼+ ⅛ tsp Baking Powder
3TbspUnsweetened Almond Milk
2TbspNon-fat Plain Greek Yogurt, 28g
2tspChopped Chocolate or Chocolate Chips, Sugar free recommended
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the ingredients except the chocolate chips in a bowl - oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt and baking powder.
Fold in chopped chocolate or chocolate chips, reserving a few.
Transfer cookie mixture onto baking sheet, spread with spoon and shape.
Sprinkle on remaining chocolate chips,
Bake about 11 minutes - top should be dry to touch.
Let cool for a few minutes and enjoy!
