A big single serve Healthy Protein Pop Tarts made with a gluten free base, filled with homemade strawberry jam and topped with high protein sugar free frosting; Vegan too. An easy protein powder poptart made in the air fryer - or baked - to satisfy the sugar cravings.
Ingredients
3Tbsp1:1 Gluten Free Baking Flour, 25g, see post for subs
Filling: Mash strawberry in bowl with back of fork (or use food processor).Add chia seeds and maple syrup, stir and place in fridge 5-10 minutes to set.
Process gluten free flour, protein powder and peanut butter powder in food processor.Add Greek Yogurt and process to form rough dough - about 15 seconds.
Transfer to lightly floured work surface and knead until smooth; about 20 seconds.
Roll dough into long rectangle (about 10”x4”, ⅛” thick); Use scrap pieces around edges to make proper shape.Cut into 2 rectangles.
Take one rectangle, dot ½” from the edge with water or egg wash, and spread filling in the middle (don’t go too close to edge).Cover with other rectangle, and seal edges with fork. Poke 4 holes in the middle.Optionally brush with egg wash on top.
Line air fryer basket with parchment paper, place pop tart in. Cook at 350°F for 4 minutes, flip and cook another 4 minutes. Crust should be lightly golden brown.Let cool for a few minutes.(or bake 375°F for 10 minutes, flipping halfway)
Frosting: Stir Greek yogurt and protein powder in a bowl, spread on top of cooled pop tart. Optionally add sprinkles.
