A rich, fudgy and insanely good Protein Skillet Brownie that’s actually healthy! Sweetened with protein powder and moistened with Greek yogurt, this protein brownie skillet is gluten free, has no sugar, no oil, no butter and no eggs either! A Vegan option too.
Ingredients
¼cupChocolate Protein Powder, 22g
¼cupUnsweetened Cocoa Powder, or Cacao Powder, 20g
2Tbsp + 2 tsp1:1 Gluten Free Baking Flour, 25g, see post for subs
2TbspZero Calorie 1:1 Sugar Replacement, 24g
¼tspBaking Soda
½cupNon-fat Greek Yogurt, 112g
¼cupUnsweetened Almond Milk, 60ml
1½TbspSugar-free Chocolate Nut Butter Spread, 21g, see post for subs
1TbspChopped Chocolate or Chocolate Chips, 14g, Sugar-free recommended below
Instructions
Preheat oven to 350°F and lightly grease an 8” cast iron or oven-safe skillet.
In a bowl, whisk chocolate protein powder, unsweetened cocoa powder, gluten free flour, zero calorie sugar replacement and baking soda.
In a large bowl, whisk together Greek yogurt and almond milk.
Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder will make the brownie dense.
Add in chocolate nut butter spread and chocolate chips (reserving few for the top) and fold.
Batter should be thick.
Transfer batter into skillet, smoothen with a spatula or back of spoon and top with remaining chocolate chips.
Bake for 22 minutes or until the top is set. Toothpick inserted into the center should come out mostly dry.
