Unbelievably fluffy Pancake Mix Protein Muffins made with just 5 ingredients, one of which is protein powder, and no banana either! Healthy protein pancake muffins can be made with Kodiak Cakes or Krusteaz protein pancake mix and are perfect for a meal prep breakfast or post workout treat.
Ingredients
¾-1cupProtein Pancake Mix, or any just-add-water pancake mix, weighed 100g
¼cupProtein Powder, 22g
6TbspAlmond Milk
¼cupNon fat Greek Yogurt, 56g
1Egg, or liquid egg substitute
Optional toppings: 1-2 Tbsp Chocolate Chips, Nuts or Seeds
Instructions
Preheat oven to 400°F, line 6 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).
In a large bowl, whisk together milk, Greek yogurt and egg.
Add in protein pancake mix and protein powder and fold to combine.Don’t over-mix or muffins will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
Divide the batter among muffin cups, about ¾ way to the top. Sprinkle optional toppings.
Bake for 5 minutes, then reduce temperature to 350°F (leaving muffins in oven) and bake another 13 minutes. A toothpick inserted into center should come out dry.
Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely, about 10 minutes, and enjoy.
Notes
Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
