Soft and fudgy No Bake Protein Blondies with rich almond butter flavor and perfect sweetness from protein powder. With no baking involved, these protein powder blondie squares are a great quick fix healthy dessert; Sugar free, gluten free and low carb too.
Ingredients
⅓cupAlmond Butter, 85g, crunchy or smooth
¼cupVanilla Protein Powder, 22g
¼cupUnflavored Protein Powder, 22g, see post for subs
¼cupAlmond Flour, 20g
2TbspCoconut Flour, 14g
3TbspUnsweetened Almond Milk, 45ml
Optional toppings:
½TbspChocolate Chips, Sugar free recommended
Chopped pretzels or cereal
Instructions
Line a 7x5” pan or 8½ x 4½” loaf pan with parchment paper; leave an overhang to lift out later.
Mix all ingredients except chocolate chips in a bowl - almond butter, unflavored protein powder, vanilla protein powder, almond flour, coconut flour and milk.
Add more milk if the mix is too dry or coconut flour if the mix is too wet.
Spread in prepared pan and use spoon/spatula or fingers to smoothen.
Optional topping:
Place the chocolate chips in a large microwave safe bowl and microwave at 30 second intervals, stirring - for about 45 seconds until completely melted.
Sprinkle on any toppings, and drizzle on melted chocolate.
Transfer to freezer to cool about 5-10 minutes.
Lift layers out of pan, place on cutting board and using a sharp knife, slice into 6 bars.
