Just amazing Protein Cookie Cups with a protein chocolate filling, but still sugar free! Protein packed cookie dough cups are made with simple ingredients, are gluten free and easily Vegan too.
Ingredients
⅔cupOat Flour, 60g, see post for subs
¼cupVanilla Protein Powder, 22g
2tspZero Calorie 1:1 Sugar Replacement, 8g
1tspBaking Powder
1Egg, room temperature
2TbspCreamy Peanut Butter, 32g
Filling:
¼cupChocolate Protein Powder, 22g
3TbspUnsweetened Cocoa Powder, or Cacao Powder, 15g
5TbspWater
½tspMelted Coconut Oil
Instructions
Preheat oven to 350°F, and grease 6-cup muffin pan with oil spray (or use parchment paper/cupcake liners).
In a bowl, combine dry ingredients - oat flour, protein powder, zero calorie sugar replacement and baking powder.
In a large bowl, whisk egg and peanut butter.
Add dry mix to wet and mix to form cookie dough.
Divide dough into 6 parts, roll into balls, and flatten into discs.Place into muffin cups and lightly press down and along the sides to form a cup shape.
Place muffin tray in freezer for 8-10 minutes to chill.
Bake for 12 minutes until cooked.
Let cool for about 5 minutes, remove from pan, and allow to cool completely.
Filling:
In a large bowl, combine all the ingredients - chocolate protein powder, cocoa powder, water and coconut oil.
Whisk or stir with a spoon until uniform. Add some more water for a thinner consistency.
Divide chocolate filling among cookie cups, and add toppings of choice.
Optionally, place in freezer for 20 minutes for filling to harden.
