Easy and healthy Brown Sugar Cinnamon Protein Pop Tarts but actually sugar free! This high protein pop tart uses protein powder in the dough, brown sugar cinnamon filling and frosting too.
Ingredients
¼cupOat Flour, 25g, see post for subs
1TbspVanilla Protein Powder, 6g
1TbspPeanut Butter Powder, 6g
2½TbspNon-fat Plain Greek Yogurt, Cold 35g
Filling:
1½TbspNon-fat Plain Greek Yogurt, 21g
1tspVanilla Protein Powder, about 2g
1tspZero Calorie 1:1 Brown Sugar Substitute, or regular Brown/Coconut Sugar
½tspCinnamon
Frosting:
1TbspVanilla Protein Powder, 6g
½tspCinnamon
2tspWater, 10ml
Instructions
Process oat flour, protein powder and peanut butter powder in food processor.
Add Greek Yogurt and process to form rough dough - about 15 seconds; Stop as soon as ball forms.
Divide into two halves. Roll each dough into a ball and then into rectangles (about 5”x4”, ⅛” thick); Use scrap pieces around edges to make proper shape if needed.
Make filling and assemble:
In a small bowl, combine yogurt, vanilla protein powder, brown sugar substitute and cinnamon.
Take one rectangle and spread filling in the middle (leave about ½” from the edge).
Cover with other rectangle, and seal edges with fork. Poke 4 holes in the middle.
Place in air fryer basket and cook at 400°F for 6 minutes. Crust should be lightly golden brown.(or bake 425°F for 8 minutes, flipping halfway)
Let cool for a few minutes.
Frosting: Stir protein powder, cinnamon and water in a bowl and spread on top of cooled pop tart.
