Super easy and fluffy Pancake Mix Protein Donuts with just add water pancake mix, protein powder and Greek yogurt too. Baked high protein Kodiak pancake mix donuts are great for a healthy dessert, breakfast and post workout treat.
Ingredients
1cupProtein Pancake Mix, or any just-add-water pancake mix, weighed 100g
1scoopVanilla Protein Powder, 30g, ⅓ cup
⅓cupAlmond Milk, 80ml
¼cupNon fat Greek Yogurt, 56g
1Egg
Glaze:
3TbspChocolate Chips, Sugar-free recommended, 42g
¼tspCoconut Oil
Instructions
Preheat oven to 350°F and spray a 6-cavity donut pan with cooking spray to grease.
In a large bowl, whisk together milk, Greek yogurt and egg.
Add in protein pancake mix and protein powder and fold to combine.Don’t over-mix or donuts will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
Divide the batter among donut pan cavities, about ⅔ way to the top.
Bake for 13-15 minutes. A toothpick inserted into center should come out dry.Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely.
Glaze:
Place chopped chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.Allow to cool slightly.
Use spoon to spread chocolate on top (rounded) side of donut.
Notes
Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
