Ingredients
¼cupOat Flour, 22g, see post for subs
2TbspChocolate Protein Powder, about 11g
1TbspUnsweetened Cocoa Powder, or Cacao Powder, 5g
1TbspPeanut Butter Powder, 6g
¼ + ⅛ tspBaking Powder
3TbspUnsweetened Almond Milk
2TbspNon-fat Plain Greek Yogurt, 28g
1tspRed Food Coloring (Liquid)
Filling:
1TbspReduced Fat Cream Cheese, 14g
2tspNon-fat Greek Yogurt, 10g
1tspVanilla Protein Powder, 2g
Topping:
1tspChopped White Chocolate or Chocolate Chips, Sugar free recommended, 5g
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the ingredients for the cookie in a bowl - oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt, red food coloring and baking powder. Batter should be thick.
In another bowl, stir together cream cheese, Greek yogurt and vanilla protein powder.
Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.Spread cream cheese filling in the middle, cover with remaining cookie mixture and shape.Top with chopped chocolate or chocolate chips.
Bake about 12-13 minutes - top should be cooked and dry to touch.
Let cool for a few minutes and enjoy!
