Half Baked Protein Cookie Pot for one; A single serve protein powder dessert that’s healthy and sugar free. Make this hot half baked cookie dough recipe for a quick solo indulgence or to share for two.
Ingredients
3TbspVanilla Protein Powder, about 17g
1Tbsp1:1 Gluten Free Baking Flour, 8g, see post for subs
Preheat oven to 350°F and grease a 1 cup ramekin with cooking spray.
In a bowl, stir vanilla protein powder, gluten free flour, coconut flour, egg white, peanut butter, baking powder and milk (gradually).Batter should be smooth but thick; Add more coconut flour if too runny and milk if too dry.
Add in half the chocolate chips.
Transfer batter into ramekin and top with more chocolate chips.
Bake for 10-11 minutes.Top should be just set.
Let cool for a few minutes and enjoy!
