Realistic Twix Protein Donuts with vanilla and peanut butter caramel donut layers, chocolate glaze, and actual shortbread too! Healthy copycat Twix donuts use protein powder and are sugar free and low fat too.
Ingredients
½cupUnsweetened Applesauce, 120g
3Egg Whites, about ¼ cup + 2 Tbsp, 92g
Peanut Butter Layer:
½scoop Peanut Butter Protein Powder (or Vanilla), Whey-Caesin, 15g
2TbspPeanut Butter Powder, 12g
2TbspWhole Wheat Pastry Flour, 15g, see post for subs
½tspBaking Powder
Vanilla Layer:
½scoopVanilla Protein Powder, Whey-Caesin, 15g
2TbspWhole Wheat Pastry Flour, 15g, see post for subs
Preheat oven to 350°F and spray a 6-cavity donut pan with cooking spray to grease.
In a bowl whisk applesauce and egg whites.
Prepare 2 dry mixes:Bowl 1: peanut butter protein powder, peanut butter powder, whole wheat pastry flour and baking powderBowl 2: vanilla protein powder, coconut flour, whole wheat pastry flour and baking powder
Add half wet mixture into each bowl, and gently fold each until combined.DO NOT OVER-MIX or gluten from flour or protein powder will bake donuts dense. Batter should be slightly thick.
Divide peanut butter batter evenly among donut pan cavities, layer chopped shortbread biscuit and then add vanilla-shortbread batter (peanut butter should be on bottom).
Bake for 15 minutes or until a toothpick inserted into the donut comes out dry.
Let cool for 10 minutes and remove from pan. Transfer to a cooling rack to cool.
Chocolate:
Place chopped chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.Allow to cool slightly.
Use spoon to spread chocolate on top (rounded) side of donut.
