A quick, hacky Protein Pull Apart Bread made with pancake mix! This protein powder pull apart pancake bread is healthy, sugar free, low fat and has a keto option too. Perfect for a post workout or breakfast.
Ingredients
⅔cupProtein Pancake Mix, or any just-add-water pancake mix, 68g, see post for sub
3TbspVanilla Protein Powder, 16g
3TbspUnflavored Protein Powder, 16g, see post for sub
¼tspBaking Powder
½cupNon-fat Greek Yogurt, 112g
Instructions
Preheat oven to 350°F and grease round 7” pan with.
In a large bowl, combine protein pancake mix, vanilla protein powder, unflavored protein powder and baking powder.
Add yogurt and mix until combined to form a shaggy dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make the bread balls tough.
Wet your palms, divide dough into 12 pieces (1-2 Tbsp size) and roll into balls.Dough will be sticky.Place dough balls in pan, leave a little gap in between.
Bake for 14 minutes until outside is slightly browned and looks cooked.
Let cool a little, top with chocolate sauce, chips or maple syrup and enjoy.
Notes
Add stevia sweetener if your protein powder is not sweet enough.
