An amazing Collagen Banana Bread made with collagen peptides and no protein powder! This collagen powder banana bread is sweetened with monk fruit and sugar free maple syrup for a healthy recipe with high protein and low sugar.
Ingredients
12scoops Unflavored Collagen Powder, 120g
1cup + 2 TbspWhole Wheat Pastry Flour, 135g, see post for subs
⅔cupCoconut Flour, 75g
¼cupZero Calorie 1:1 Sugar Replacement, 48g
1tspCinnamon
4tspBaking Powder
1½cupMashed Banana, 360g, from 3 medium
3TbspMaple Syrup, Sugar free recommended below
2Eggs, Room Temperature
2Egg Whites, 60g
2TbspMelted Butter, 28g
1tspVanilla Extract

Instructions
Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.
In a medium bowl, whisk unflavored collagen powder, whole wheat flour, coconut flour, zero sugar replacement, cinnamon and baking powder.
In a large bowl, whisk together mashed banana, maple syrup, eggs, egg whites, melted butter and vanilla extract (hand mixer recommended).
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or gluten from wheat flour will make the bread dense.
Transfer batter to baking pan.
Bake for 55-60 minutes, covering with a foil tent after 40 minutes.A toothpick inserted into center should come out dry.
Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 40 minutes and cut into slices (plastic knife recommended).
