A quick, hacky and healthy Single Serve Peach Crisp made in the microwave and topped with granola! This high protein peach crisp for one uses protein powder and is truly a great healthy and sugar free individual mini dessert!
Ingredients
Peach Filling:
1smallPeach, Sliced in wedges, 130g, see post for frozen
1TbspVanilla Protein Powder, 5g
¼tspLemon Juice, Optional
⅛tspCinnamon
Crisp Topping:
2TbspGranola, recommendation below, 14g
Instructions
Place peaches in a microwave-safe bowl, add vanilla protein powder, lemon juice and cinnamon. Toss to coat; Use hands to coat completely.
Microwave on high for about 1½-2 minute.
Cool for 2 minutes, sprinkle on granola.Top with whipped cream or ice cream and serve!
