Soft and sweet Protein Monkey Bread Muffins but healthy, sugar free and low fat! Protein monkey bread bites use protein powder, greek yogurt and monkfruit sweetener, and is a great healthy monkey bread recipe from scratch!
Ingredients
¾cup1:1 Gluten Free Baking Flour, 90g, see post for sub
¼cupVanilla Protein Powder, 22g
¼cupUnflavored Protein Powder, 22g, see post for sub
1tspBaking Powder
¾cupNon-fat Greek Yogurt, 168g
½TbspUnsweetened Almond Milk, 7ml
Cinnamon Sugar Coating:
2tspmelted Butter, 11g
1½TbspZero Calorie 1:1 Sugar Replacement, 18g
1½tspCinnamon
Optional Icing:
Zero Calorie 1:1 Powdered Sugar Substitute, or regular

Instructions
Preheat oven to 350°F and grease 6 cups of a muffin pan.
In a large bowl, combine flour, vanilla protein powder, unflavored protein powder and baking powder.
Add yogurt and milk and mix until combined to form a shaggy, sticky dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make the bread balls tough.
Slightly wet your palms, divide dough into 18 pieces (1-2 Tbsp size).Roll into balls (wet palms again as needed).Dough will be sticky.
Cinnamon Sugar Coating:
Melt Butter in microwave-safe bowl if not already melted.
In a small shallow bowl, combine sugar replacement and cinnamon.
Roll a dough ball in melted butter, then in cinnamon sugar mixture, and place in a muffin pan cup.Repeat with all balls, placing 3 in each cup.
Bake for 14-15 minutes until outside and center(dough ball intersection) is dry.Toothpick inserted into muffin should come out clean.
For icing: Stir together powdered sugar and a bit of milk in a bowl and drizzle on muffins.
Notes
Add stevia sweetener if your protein powder is not sweet enough.
