Beautiful Pancake Mix Protein Brownies with layered protein brownie and pancake, both using pancake mix, not four. These healthy pancake brownie recipe uses Kodiak protein pancake mix, cocoa powder and protein powder.
Ingredients
½cup + 2 TbspUnsweetened Cocoa Powder, or Cacao Powder, 50g
¼cupWhey-Caesin Chocolate Protein Powder, 23g
¼cupWhey Chocolate Protein Powder, 23g
¼cupZero Calorie 1:1 Sugar Replacement, 48g
½cupProtein Pancake Mix, or any just-add-water pancake mix, weighed ~53g
1¼cupNon-fat Greek Yogurt, 281g
½cupUnsweetened Almond Milk, 120ml
3TbspPeanut Butter, 48g, see post for subs
Pancake Batter:
½cupProtein Pancake Mix, or any just-add-water pancake mix, weighed ~53g
2TbspWhey-Caesin Vanilla Protein Powder, 11g
¼cupUnsweetened Almond Milk, 60ml
2Egg Whites, 62g
1TbspPeanut Butter, 16g, see post for subs
Instructions
Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
In a bowl, whisk cocoa powder, chocolate protein powders, zero calorie sugar replacement, and pancake mix.
In a large bowl, whisk together Greek yogurt and almond milk.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.
Add in peanut butter and fold.Batter should be thick.
Pancake batter: In another bowl, mix pancake mix, protein powder, milk, egg whites and peanut butter.
Scoop out both batters into pan (alternating).
Bake for 22 minutes; Toothpick inserted into the center should come out slightly wet.
Remove from oven and let cool completely.
