Surprise Chocolate Stuffed Churro Protein Muffins like fresh soft churros and dipping sauce in one! These healthy churro muffins are sweetened with protein powder and use sugar free chocolate and cinnamon-’sugar’ topping!
Ingredients
1¼cupUnsweetened Applesauce, 300g
½cupNon-fat Greek Yogurt, about 112g, Room temperature
6TbspUnsweetened Almond Milk, 90ml
2Eggs, Room Temperature
1¼cupWhole Wheat Pastry Flour, 150g
½cupVanilla Protein Powder, 45g, Whey-caesin
⅓cupUnflavored Protein Powder, 30g, Whey-caesin, see notes for sub
2TbspCoconut Flour, 14g
2tspCinnamon
1TbspBaking Powder
Filling:
¼cupLakanto Chocolate Chips, 56g
Assembling:
2tspMelted Butter
3TbspLakanto Golden Sweetener
1tspCinnamon
Instructions
Preheat oven to 400°F, line 14 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).
In a large bowl, whisk together applesauce, yogurt, almond milk and eggs.
In another bowl, whisk whole wheat pastry flour, vanilla protein powder, unflavored protein powder, cinnamon and baking powder.
Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder and gluten will from wheat flour will make the muffins dense.
Divide half the batter among muffin cups.Place chocolate chips in middle, cover with remaining half batter.
Bake & Assemble:
Bake for 5 minutes, then reduce temperature to 350°F (leaving muffins in oven) and bake another 13 minutes (total time 18-20 min).A toothpick inserted should come out dry.
Cool for 5 minutes, then remove from pan.
In a small shallow bowl, combine Lakanto sweetener and cinnamon.
Lightly dip muffin top in melted butter, then in cinnamon ‘sugar’ mixture, and place on cooling rack.Repeat with all.
