Unique Chocolate Caramel Protein Sandwich Cookies are a healthy and sugar free sweet treat. These healthy chocolate sandwich cookies have protein powder in the cookie and the caramel filling, and will surely satisfy cravings.
Ingredients
Cookie:
½cupOat Flour, 45g
⅓cupChocolate Protein Powder, Whey-Caesin, 30g
3TbspUnsweetened Cocoa Powder, 15g
¼cupUnsweetened Almond Milk, 60ml
2TbspCreamy Almond Butter, 32g
1tspVanilla Extract
Caramel Filling:
3TbspPeanut Butter Powder, 18g
½scoopUnflavored Protein Powder, Whey-Caesin, 15g
2TbspVanilla Protein Powder, Whey, 11g
2TbspCreamy Almond Butter, 32g
1TbspSugar-free Maple Syrup, 15ml, Recommendation below
1½TbspWater, 22ml
¼tspVanilla Extract
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl combine oat flour, chocolate protein powder and cocoa.
Add in almond butter, milk and vanilla and mix to form dough ball.Add more milk if too dry, oat flour if too wet.
Roll dough into ball using hands.
Place parchment paper on work surface, place dough on and use rolling pin to roll into sheet about ⅛” thick.
Use small circle cookie cutter or spice jar lid (about 2” wide) and cut out circles.Transfer to parchment lined baking sheet.Repeat with leftover dough until all is used up. You should have 28 circles.
Bake for 9-10 minutes.
Let cool on baking sheet 2-3 minutes; Then transfer to cooling rack to cool and harden.
Caramel Filling:
LET COOKIES COOL FIRST.
Mix peanut butter powder, vanilla protein powder and unflavored protein powder in a bowl.
Add almond butter, maple syrup and vanilla, then water (little a time) and mix to form frosting consistency.Add water if too thick, protein powder if too thin.
Assemble:
Place about 2-3 tsp filling on one cookie, cover with another cookie and smush down.
