A rich Cappuccino Protein Cookie with an actual cappuccino-flavored topping too! This healthy coffee flavored protein cookie uses cappuccino protein powder and has no sugar, oil or butter.
Ingredients
¼cupOat Flour, 22g, see post for subs
½scoopCappuccino-flavored Protein Powder, Whey, 15g, see post for subs
1TbspUnflavored Protein Powder, Whey-caesin, 5g, see post for subs
¼tspBaking Powder
2TbspUnsweetened Applesauce, 30g
2TbspNon-fat Plain Greek Yogurt, 28g
½TbspCreamy Almond Butter, 8g
Topping:
2TbspCappuccino-flavored Protein Powder, Whey, 11g, see post for subs
1TbspNon-fat Green Yogurt, 14g
1tspCoconut Flour, 2g
Optional: 1 tsp White Chocolate Chips, Melted, 5g
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the dry ingredients in a bowl - oat flour, cappuccino protein powder (or vanilla + instant coffee), unflavored protein powder and baking powder.
Add applesauce, Greek yogurt, almond butter and mix.
Transfer cookie mixture onto baking sheet, spread with spoon and shape into 5-6” cookie.
Bake about 12-13 minutes - top should be cooked and dry to touch.
Topping:
Let cookie cool slightly,
In a bowl, combine protein powder, greek yogurt and coconut flour; Mix until smooth.Add milk if too wet, coconut flour if too dry.
Spread over cookie, top with melted white chocolate and enjoy!
