Super rich and indulgent Chocolate Protein Tiramisu with a chocolate protein cake and protein cream! Healthy chocolate tiramisu recipe with no eggs, no sugar and no mascarpone either! A macro friendly dessert.
Ingredients
Chocolate Protein Cake:
¾cupWhole Wheat Pastry Flour, see post for subs, 90g
⅔cupChocolate Protein Powder (Whey), 60g
½cupChocolate Protein Powder (Whey-caesin), 45g
6TbspUnsweetened Cocoa Powder, 30g
4½TbspZero Calorie 1:1 Sugar Replacement, 52g
1½tspBaking Soda
1cup + 2 TbspHot Water, 270ml
¾cupUnsweetened Applesauce, 180g
2tsptsp Melted Butter, 10g
1TbspLemon Juice
Cream:
8ozReduced Fat Cream Cheese, 224g
1cupNon-fat Greek Yogurt, 225g
1½cupsWhey-Caesin Vanilla Protein Powder, 45g
½cupUnsweetened Almond Milk, 120ml
Assembling:
2cupsCoffee, Room temperature
2TbspUnsweetened Cocoa Powder
Instructions
Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
In a bowl, whisk flour, whey and whey-casein chocolate protein powders, unsweetened cocoa powder, zero calorie sugar replacement and baking soda.
In a large bowl, whisk together hot water, applesauce, butter and lemon juice.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
Pour batter into pan, and bake for 18-20 minutes.Don’t let the batter sit out.
A tester inserted into the center should come out clean and center of cake springy to touch.
Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
Cut into half along one edge, then cut both pieces into half along the height. You should have 4 thin 4”x8” rectangles. Cut each into 1” strips (7 cuts across long end).
Cream:
In a large bowl, beat cream cheese using an electric hand mixer or paddle attachment of stand mixer until smooth; About 1 minutes.
Add Greek yogurt and milk and beat again until combined.
Beat in vanilla protein powder, scraping down the sides if needed.
Assemble:
Dip each cake strip in coffee, then place in 8”x8” glass dish.Repeat and cover entire base.
Spread half cream mixture on top (smoothen with back of spatula or spoon)
Arrange another layer of coffee-dipped cake strips, then another layer of cream.
Cover and refrigerate 6 hours to overnight.
Dust with cocoa power (use sieve).
