Delicious Protein Oreo Lava Cake for an easy and healthy dessert or one. This molten Oreo lava mug cake uses protein powder and is gluten free and sugar free too!
Ingredients
¼cupChocolate Protein Powder, Whey-casein, 22g
2TbspBlack Cocoa Powder, 10g
1½TbspWhole Wheat Pastry Flour, 11g, see post for subs
¼tspBaking Powder
¼cupUnsweetened Almond Milk, 60ml
1TbspGreek Yogurt, 14g
1Egg White, 31g, 2 Tbsp
¼tspVanilla Extract
Filling:
2tspReduced Fat Cream Cheese, Softened, 11g
2tspNon-fat Plain Greek Yogurt, 11g
2tspVanilla Protein Powder, Whey-casein, 2g
1tspUnsweetened Almond Milk, 5ml
Instructions
Preheat oven to 350°F, and lightly grease a 1 cup ramekin.
In a bowl, whisk flour, chocolate protein powder, black cocoa powder and baking powder.
In another bowl, whisk almond milk, egg white, yogurt and vanilla.
Add wet mix to try and stir until combined. Batter should be smooth.Taste batter and add sweetener if needed.
Make filing: In another bowl, mix softened cream cheese, Greek yogurt, vanilla protein powder and almond milk.
Pour half batter into ramekin, add filling, and pour remaining batter.
Bake for 18-20 minutes; Top will be slightly soft.Let cool for a few minutes, invert onto plate and enjoy!
Notes
Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
