Just amazing Peanut Butter Blueberry Protein Cookies made with oat flour, peanut butter powder and no eggs for a gluten free, low fat and Vegan recipe! These high protein blueberry oatmeal cookies are a great healthy breakfast or post-workout treat.
Ingredients
¾cupOat Flour, 68g, see post for subs
½cupVanilla Protein Powder, Whey-casein, about 45g
¼cupUnflavored Protein Powder, Whey-casein, 22g
6TbspPeanut Butter Powder, 36g
1tspBaking Powder
½cupUnsweetened Applesauce, 120g
½cupNon-fat Plain Greek Yogurt, 112g
¼cupUnsweetened Almond Milk, 60ml
1½TbspPeanut Butter, 24g
½cupBlueberries, 70g
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the dry ingredients in a bowl - oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
Add applesauce, Greek yogurt, almond milk, peanut butter and mix.
Add blueberries and mix again.
Divide cookie mixture into 9 on baking sheet (keep 1-2” space).Spread with spoon or spatula and shape into cookies.
Bake about 9 minutes - top should be cooked and dry to touch, but still soft.
Transfer to cooling rack to cool completely.
