Amazing, protein-packed Baklava Banana Bread that’s oil free and added sugar free too! This Baklava banana loaf uses protein powder for sweetener and sugar free honey for all the healthy amish vibes!
Ingredients
200gMashed Banana, from completely ripe bananas
½cupUnsweetened Applesauce, 120g, or more mashed banana
½cupNon-fat Greek Yogurt, 112g
⅓cupAlmond Milk, 80ml
2Eggs, Room Temperature
1cup + 1½ TbspWhole Wheat Pastry Flour, 130g
½cupUnflavored Protein Powder, Whey-casein, 45g
½cupVanilla Protein Powder, Whey-casein, 45g
1TbspBaking Powder
2tspCinnamon
1½tspCardamom
Filling:
½cupPistachios without shell, Chopped, 56g
¼cupChopped Almonds, 28g
1TbspHoney, 15g, Sugar-free recommendation below
¼tspCinnamon
⅛tspCardamom
Instructions
Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.
In a large bowl, whisk together mashed banana, applesauce, Greek yogurt, almond milk and eggs.
In another bowl, whisk whole wheat flour, unflavored protein powder, vanilla protein powder, baking powder, cinnamon and cardamom.
Add dry mix to wet, and gently fold until combined.DO NOT OVER-MIX or protein powder and gluten from wheat flour will make the bread dense.
Filling: In a small bowl, mix chopped pistachio, almonds, honey, cinnamon and cardamom.
Pour ⅔ batter into prepared loaf pan, spread ⅔ filling in the middle, then pour remaining ⅓ batter.Top with remaining nut filling mixture.
Bake for 55-60 minutes, covering with a foil tent after 40 minutes.A toothpick inserted into center should come out dry.
Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.
