The best Protein Apple Walnut Cake with fresh apples and chopped walnuts, but added sugar free and low fat! Healthy apple walnut cake uses protein powder for sweetness, has no sugar, and very little butter.
Ingredients
¾cupWhole Wheat Pastry Flour, see post for subs, 90g
⅔cupVanilla Protein Powder (Whey-casein), 60g
⅓cupUnflavored Protein Powder (Whey-casein), 30g
¼Cinnamon-flavored Peanut Butter Powder, 24g, or plain
1½tspBaking Soda
½tspCinnamon
¼tspNutmeg
1cup + 2 TbspHot Water, 270ml
¾cupUnsweetened Applesauce, 180g
2tspMelted Butter, 10g
1TbspLemon Juice
Filling & Topping:
1medium Apple, Sliced, 180g
2TbspChopped Walnuts
Instructions
Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.
In a bowl, whisk flour, vanilla and unflavored protein powders, peanut butter powder, baking soda, cinnamon and nutmeg.
In a large bowl, whisk together hot water, applesauce, butter and lemon juice.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
Add in most of sliced apples and walnuts; Fold gently.
Pour batter into pan and top with remaining apples and walnuts.
Bake for 25-30 minutes (cover with foil after 20 minutes to prevent top from burning).Don’t let the batter sit out.A tester inserted into the center should come out clean and center of cake springy to touch.
Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
