Unexpectedly good Peanut Butter Peppermint Protein Cookies for a rich and refreshing Christmas sweet. Healthy PB peppermint cookies use protein powder, applesauce and peppermint-flavored peanut butter for an extra flavorful recipe!
Ingredients
1TbspFlaxseed Meal, 6g
2TbspWater, 30ml
¾cupWhole Wheat Pastry Flour, 90g
6TbspVanilla Protein Powder, Whey-casein, 34g
6TbspPeanut Butter Protein Powder, Whey-casein (or more Vanilla), 34g
2TbspZero Calorie Monkfruit Sugar alternative, or regular, 24g
2TbspWhite Chocolate Chips, 28g
1Peppermint Candy Cane, Crushed, 13g
Instructions
Preheat oven to 350°F and line baking sheet with parchment paper.
In a small bowl, combine flaxseed meal and water and let rest 5 minutes.
In a bowl combine flour, vanilla protein powder, peanut butter protein powder, peanut butter powder and baking powder.
Add in flaxseed mixture, applesauce, peanut butter and almond milk (little at a time) and mix to form dough.
Divide into 18 portions and roll into balls - about 1” wide.Roll in granulated sugar alternative, and place on baking sheet (about 2” apart).
Bake for 6 minutes until lightly browned.Immediately press white chocolate chips and crushed peppermint in center of each cookie (cookie will crack around the edges).
Transfer from cookie sheet to cooling rack to cool.
