Light and sweet but Healthy Sweet Potato Biscuits made with protein powder, no sugar, and only a bit of butter. Sweet potato protein biscuits are super easy, low fat, low calorie and perfect for your next brunch.
Ingredients
¾cupMashed Sweet Potato, 180g, See notes to prep
¾cupWhole Wheat Pastry Flour, 90g, see post for sub
½cupUnflavored Protein Powder, Whey-casein, 45g, see post for sub
¼cupCoconut Flour, 28g
¼cupVanilla Protein Powder, Whey-casein, 22g
3tspBaking Powder
½cupNon-fat Plain Greek Yogurt, 112g
2TbspCold Butter, Grated, 28g
Instructions
In a bowl, whisk flour, unflavored protein powder, coconut flour, vanilla protein powder and baking powder.
Add mashed potatoes, yogurt and cold butter; Mix until combined to form a dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make the biscuits tough.
Transfer to lightly floured surface and knead lightly.Shape (gently) into circle about 1-1½” thick.
Cut with a biscuit cutter or glass or sharp knife to cut into 7 biscuits (shape excess dough to get total of 7).Place on parchment-lined baking sheet
Bake for 15 minutes until outsides are crusty and lightly browned, but still soft to touch. Toothpick inserted into center should come out clean.Let cool.
Notes
For mashed sweet potatoes:
Peel and chop sweet potato into 1½” cubes. Add to boiling water and let cook about 12-15 minutes till easily pierced with fork.
Drain water and let cool 1-2 mins.
Use hand mixer, food processor or high speed blender and puree until smooth.
Cool completely.
