A real easy no-bake Blueberry Lasagna recipe with a graham cracker crust, protein vanilla and peanut butter pudding and homemade berry jam. Healthy blueberry delight sure to please a crowd!
1TbspSugar-free Maple Syrup, 15ml, Recommendation below
Vanilla Pudding:
1cupNon-fat Greek Yogurt, 225g
⅓cupUnsweetened Almond Milk, 80ml
½cupVanilla Protein Powder, Whey-casein, 45g
2TbspVanilla Instant Pudding Mix, 15g, Sugar free
Peanut Butter Pudding:
1cupNon-fat Greek Yogurt, 225g
⅓cupPeanut Butter Protein Powder, Whey-casein, 30g, or Vanilla
¼cupBlueberry flavored Peanut Butter Powder, 24g, or Regular
2TbspVanilla Instant Pudding Mix, 15g, Sugar free
¼cupUnsweetened Almond Milk, 80ml
Blueberry Topping:
1¼cupBlueberries, 187g
2tspWater, 10ml
1TbspVanilla Protein Powder, Whey-casein, 5g
Instructions
Jam:
Heat blueberries and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 7-10 min.Use a spoon or potato masher to mash to desired consistency.
Remove from heat, stir in protein powder and let cool.
Base:
Prepare an 8” x 8” pan or baking dish.
In a bowl, combine crushed graham crackers, almond butter, maple syrup.
Transfer to pan, and use back of spoon/sparula to press down and spread.
Vanilla Pudding:
In a bowl, mix Greek yogurt, protein powder, vanilla instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
Spread over base.
Peanut Butter Pudding:
In a bowl, mix Greek yogurt, protein powder, peanut butter powder, vanilla instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
Spread over vanilla pudding layer.
Topping:
Let jam cool completely first.
Spread over peanut butter layer, slice into 12 and serve.
