Easy and Healthy Mint Chocolate Dessert with layers of a sugar-free mint chocolate oreo base, mint protein pudding, chocolate protein pudding and low fat cool whip!
Ingredients
Mint Oreo Base:
8Sugar-free Mint Chocolate Oreos, Recommendation below, ~88g
In a food processor combine oreos, rice krispies, cocoa powder, chocolate flavor almond butter and chocolate syrup.
Transfer to pan, and use back of spoon/spatula to press down and spread.
Mint Protein Pudding:
In a bowl, mix Greek yogurt, protein powder, vanilla instant pudding, peppermint extract, green food color and milk (adding milk little at a time) until smooth.
Spread over base.
Chocolate Protein Pudding:
In a bowl, mix Greek yogurt, protein powder, cocoa powder, chocolate instant pudding, and milk (add milk little at a time) until smooth.
Spread over mint pudding layer.
Topping:
Spread cool whip on top of pudding.
Cover with plastic wrap and chill 1-2 hours in the fridge.
Sprinkle on chopped mint chocolate oreo, cut into 6 pieces and enjoy.
