The most easy and BEST Healthy Almond Croissant made with a high protein and low fat almond filling. These almond croissants use protein powder and applesauce instead of sugar and butter.
Ingredients
16Day-old Prepared Frozen Reduced Fat Crescent Rolls, 28g each
or 8 Large Croissants
Filing:
½cupVanilla Protein Powder, Whey, 45g
80gAlmond Flour
½cupUnsweetened Applesauce, 120g
1Egg
¼tspSalt
Sugar Syrup:
3TbspWater, 45ml
1½tsp0 calorie Monkfruit Sweetener, 6g
Topping:
½TbspSliced Almonds, 28g
Powdered 0 Calorie Monkfruit Sweetener
Instructions
Previous Day:
Preheat oven to 375°F and bake croissants according to package instructions (about 10 min for small croissants).
Let cool and keep overnight in an airtight container.
Day of:
Preheat oven to 375°F and line a baking pan with parchment paper.
Almond Filling:
In a bowl combine vanilla protein powder, almond flour, unsweetened applesauce, egg and salt.
Divide mix into ⅔ and ⅓.
Sugar Syrup:
Whisk water and monkfruit sweetener in a bowl.
Assemble:
Cut croissants in half, length-wise (tip: use serrated knife).
Brush sugar syrup on the bottom half surface.Use ⅔ filling mixture and spread filing on bottom half of croissants.
Place top halves on.Brush more sugar syrup on top and spread ⅓ filling mixture on top.Sprinkle on sliced almonds.
Bake:
Bake for 8 minutes.
Sprinkle on powdered sweetener.
