Super Healthy Circus Animal Cookie Bars made with protein powder and no extra sugar! Animal cookie protein bars are low fat, low calorie, low sugar and made in just one bowl!
Ingredients
½cupVanilla Protein Powder, Whey-casein, 45g
¼cupUnflavored Protein Powder, Whey-casein, 22g
¼cupWhole Wheat Pastry Flour, 30g, See alternatives in post above
⅓cupCashew Butter Powder, 24g, See alternatives in post above
1TbspZero Calorie Brown Sugar Substitute, 12g
¾tspBaking Soda
⅓cupUnsweetened Applesauce, 80g
1Egg
1Egg White
1TbspFlavored Cashew Butter, 14g
1½ozCircus Animal Crackers, Chopped
Instructions
Preheat oven to 350°F and grease an 8x4” loaf pan.
In a bowl combine vanilla protein powder, unflavored protein powder, cashew butter powder, flour, sugar alternative and baking soda.
Add applesauce, egg, egg white and cashew butter.Whisk until combined.
Add most of the chopped circus animal crackers. Fold to combine.
Pour batter into greased pan and spread evenly.Top with remaining animal crackers.
Bake about 12-14 minutes - top should be cooked and dry to touch, but still soft.
Transfer to cooling rack to cool completely.Slice into 8 bars.
