These Easy Cheesy Mashed Potatoes are soft, smooth, creamy and ultra-cheesy! Don’t be surprised if they turn out to be your entree, because a side order won't cut it!
Ingredients
2smallRusset Potatoes, 340g
2TbspAlmond Milk
1½TbspGreen Onion, Finely Chopped, 10g
½tspItalian Seasoning
¼tspSalt
¼tspPepper
¼cupCheddar Cheese, Shredded, or ¼ cup Nutritional Yeast for Vegan
Instructions
Cut the potato into large wedges, place in a pot over medium heat and cover with water.
Bring to a boil, then reduce heat to a low simmer, cover and cook for 15 minutes until potatoes are tender but still firm.
Drain and transfer potatoes into a bowl.
Add the milk, green onion, Italian seasoning, salt and pepper, and mash until smooth and uniform.
While still hot, fold the cheese into the mash until melted and even.
