Creamy, slightly tangy, maybe spicy Salmon Salad stuffed in Avocado. Perfect for when you’re looking for a low-carb meal full of protein, fiber and healthy fats.
Ingredients
1 6ozcanSalmon, Skinless, Deboned and packed in water, 170g
2mediumAvocados, 190g each with seed
1TbspRed Onion, Chopped, 10g
3TbspGreek Yogurt, 19g
1½tspLemon Juice
½tspDijon Mustard
⅛tspSalt
¼tspCayenne Pepper, Optional
½tspCrushed Red Pepper Flakes, Optional
Instructions
Drain and flake the salmon.
In a medium bowl, add rest of the ingredients and stir.
Add in salmon mix until combined.
Halve and de-seed avocados.
Fill each avocado half with salmon salad, dividing equally.
Top with crushed red pepper flakes, a squeeze of lemon juice and indulge!

To make this Paleo and Dairy-free, use coconut or almond - based yogurt.
