Pro-Z-Oats or Protein Zucchini Oats is a high protein oatmeal with an extra dose of veggies. With a ton of good carbs and protein, its one of the best pre or post workout fuels you can find!
Finely shred zucchini using a large-hole grater or food processor and squeeze out as much moisture as possible using paper towels.
Whisk together all ingredients in a saucepan over medium heat and cook uncovered for 2-3 minutes (Instant Oats) or 8-10 minutes (Rolled Oats), stirring occasionally.
Transfer to a bowl, add protein powder and sweetener if using, and fold.
Serve hot with your choice of toppings.

Alternatively, microwave on high for same amount of time.
