Low-Carb Palmini Carbonara is a Keto-follower, Pasta-lover’s dream come true. A glorious concoction of hearts of palm noodles, kale, and sausages tossed in a cheesy-egg mix.
Ingredients
1packet Palmini Pasta - Linguine (about 200g)
Kale & Sausages:
1cupKale, Shredded/Chopped, 67g
1tspButter
1tspGarlic, Minced
2linksChicken Sausages, Precooked
Sauce:
2Eggs
¼cupShredded Mozzarella, 28g
2tspParsley, Chopped
¼tspBlack Pepper
¼tspGarlic Powder
¼tspItalian Seasoning
Instructions
Drain Palmini and rinse thoroughly with cold water.
Fill skillet with 1 inch of water and bring to a simmer. Add kale and cook, stirring, until bright green, soft, and wilted, for about 2 min. Drain excess water.
Add butter and garlic, and toss for 30 seconds. Set aside.
Slice sausage into coins of about ⅛” thick.
Add 2-3 Tbsp water and sausages to skillet, and fry about a minute each side. Set aside.
In a small bowl, whisk the egg, spices, and cheese.
Heat Palmini in microwave on high for about 1½ minute.
Reduce heat to low, add 1-2 Tbsp water, palmini, kale and sausages and toss.
Add egg-cheese mixture and toss quickly with tongs to coat the pasta and prevent egg from scrambling. The egg will cook if the pasta is still hot.
Season with salt if desired, top with more shredded mozzarella, and serve.
