These Super Fudgy Double Chocolate Paleo Sweet Potato Brownies are everything you could ask for in a brownie and more! Healthy, flourless, sugar-free and dairy-free; Just rich chocolatey indulgence!
Ingredients
1½cupSweet Potato, Mashed and Cooled, 337g, See notes to prep
Peel (make sure to remove the thick layer under the skin) chop into 1” cubes. Cook in boiling water for about 10-15 minutes until easily pierces through with a fork.
Drain and allow to cool completely. Rinse with cold water once or twice to cool faster.
Mash with a fork or potato masher.
Make sure you let the sweet potato cool before going ahead with the recipe or it will scramble the egg.
Use room temperature eggs.
Bake on center rack.
Storage:
Cool brownies completely before storing.
Room temperature: 1-2 days, tightly wrapped in plastic wrap or airtight container.
Fridge: 1 week in an airtight container.
Freezer: 6 months, individually wrapped in plastic wrapped and placed in freezer-safe zipper bags.
