An easy, tangy marinated chicken dinner, these Baked Lemon-Yogurt Greek Chicken Tenders are infused with all the classic Greek flavors. Yogurt, Garlic, Lemon and Oregano in every juicy bite!
Ingredients
1lbChicken Tenders (454g)
Marinade:
⅓cupGreek Yogurt (about 66g)
⅓cupChopped Parsley
1½TbspLemon Juice
1TbspOlive Oil
2tspMinced Garlic
1½tspDried Oregano
½tspBlack Pepper
½tspSalt
Instructions
Marinate:
In a small bowl, stir together ingredients for the marinade and set aside half.
Place chicken tenders in a large bowl, add half the marinade and massage to coat.
Cover with plastic wrap and let marinate for 30 min-3 hours.
Bake:
Preheat the oven to 375°F. Line a baking sheet with foil and lightly grease. If you have an oven-proof rack, place it on the sheet and grease with non-stick spray or oil.
Place marinated chicken on baking sheet.
Bake for 10 min.
Baste chicken with reserved marinade, flip, baste other side, and bake another 10 min.
Garnish with parsley and serve with roasted veggies.
Notes
Use coconut or almond based yogurt to make this Paleo.
