Crispy and crunchy, these Spicy Pretzel Chicken Tenders are baked in the oven or cooked in an air fryer - the best appetizer you can find. With no bread crumbs, these pretzel crusted chicken fingers are healthy and even more perfect with a honey mustard dipping sauce.
Ingredients
1lbChicken Breast, or Tenderloins cut into strips, 454g
1¾cupsHard Pretzel Sticks/Twists, 70g
1Egg
⅓cupAlmond Flour
½tspGarlic Powder
½tspPaprika
¼tspCayenne Pepper
½tspSalt
¼tspPepper
Cooking spray/oil, for greasing
Instructions
Preheat oven to 425°F and line a baking sheet (or air fryer basket) with parchment paper.
Place pretzels in a zipper bag and beat down with rolling pin to form large crumbs(or pulse in a food processor).
Transfer to large shallow dish.
In a shallow bowl, mix together almond flour, paprika garlic powder, cayenne pepper, salt and pepper.
Prepare workstation with 3 bowls: Whisked eggs, almond flour mix, and crushed pretzels.
Dredge a piece of chicken in flour mixture, dip in egg, and press on pretzels.
Place on prepared baking sheet, or air fryer basket.
Bake for about 20 minutes or until chicken is cooked through.
For air fryer, cook at 375˚F for 18-20 minutes.
For a crispy bottom, flip for the last 3-5 minutes.
Serve with your choice of dips - Honey Mustard and Ranch are good choices!
Notes
Storage:
Fridge: In an airtight container for 3-4 days. Reheat in the oven at 350˚F for 7-10 minutes, or use an air fryer.
Freeze: Place on baking sheet and let freeze individually. Transfer to freezer safe bag. Bake at 400°F for 5-7 minutes to reheat.
Make Ahead:
After breading, place on baking sheet and let freeze individually. Transfer to freezer safe bag. Cook straight out of freezer for 25 minutes.
