Spot on Healthy Samoa Protein Bars with a protein cookie base, low fat Vegan protein peanut butter caramel, toasted coconut and sugar free chocolate drizzle. Magic healthy homemade Samoa cookie bars that taste just like the girl scout cookies!
Ingredients
Shortbread Cookie Base:
⅓cupOat Flour, 30g
⅓cupCheerios Cereal, 18g, see post for subs
½scoopVanilla Protein Powder, Whey-Caesin, 15g
2TbspUnflavored Protein Powder, Whey-Caesin, 11g, see post for subs
2TbspCoconut Flour, 14g
¼cupUnsweetened Almond Milk, 60ml
Protein Caramel:
3TbspPeanut Butter Powder, 18g
2TbspAlmond Butter, 32g
2TbspVanilla Protein Powder, Whey, 11g
2TbspUnflavored Protein Powder, Whey-Caesin, 11g, see post for subs
Line a 8 x 4” loaf pan with parchment paper; leave an overhang to lift out later.Preheat oven to 350°F.
Base:
In a food processor, combine oat flour, cheerios cereal, vanilla protein powder, unflavored protein powder and coconut flour.
Transfer to a bowl, add in almond milk (little at a time) and mix.Mixture should be thick but little sticky like dough.
Transfer to prepared pan and press down.
Bake for 10 minutes, then let cool about 10 minutes:
Protein Caramel:
In the same bowl, stir together peanut butter powder, almond butter, vanilla protein powder, unflavored protein powder, maple syrup, water (1 tsp at a time) and vanilla.
Spread on top of cookie layer and use back of spoon to smoothen.
Coconut:
Spread shredded coconut on a baking sheet and bake for about 3-4 minutes until lightly browned and toasted.
Let cool a bit then spread over caramel layer. Freeze about 5 minutes.
Lift layers out of pan, place on cutting board and using a sharp knife, slice into 8 bars.
Chocolate Drizzle:
Place chopped chocolate and coconut oil in a large microwave safe bowl and microwave about 30 seconds, stirring halfway, until completely melted.
Allow to cool to room temperature, about 5 minutes.
Use spoon to drizzle chocolate on bars.Allow to slightly cool and enjoy!
