A hacky Protein Waffle Bread Pudding made with toaster waffles; Quick, easy and healthy waffle casserole bake with any leftover waffles and a creamy custard using protein powder and Greek yogurt. A breakfast, dessert or post workout in one!
Ingredients
3Toaster Waffles, 114g, or 2 waffles
2TbspProtein Powder, 15g
¼cupUnsweetened Almond Milk, 60g
¼cupNon-fat Greek Yogurt, 56g
1Egg White
¼tspCinnamon, Optional
Instructions
Preheat oven to 350°F, and lightly grease a large two 1-1½ cup (8-10 oz) ramekin.
Chop waffle into 1½”-2” pieces (using pizza cutter or sharp knife) and place in ramekins.
In a bowl, whisk together protein powder, almond milk, Greek yogurt, egg white and cinnamon.
Pour custard mixture evenly over waffle pieces; Press down and let rest 5 min to soak.
Bake for 20 minutes until mixture is set; waffles should be slightly crisp on top.
Let cool a few minutes, top with chocolate sauce or nut better and serve.
