This Cookies and Cream Protein Cookie is like having an ice cream and cookie at once, but still healthy, sugar free and gluten free too! A big single serve Oreo inspired protein cookie sweetened with protein powder!
Ingredients
¼cupOat Flour, 22g, see post for subs
1½TbspVanilla Protein Powder, about 8g
½scoopscoop Unflavored Collagen, 5g, see post for subs
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the ingredients except the sandwich cookie in a bowl - oat flour, protein powder, unflavored collagen, baking powder, cashew butter, Greek yogurt and almond milk.
Roughly chop chocolate vanilla sandwich cookie (or Oreo) and add in most of the pieces.
Transfer cookie mixture onto baking sheet, spread with spoon and shape.Top with remaining sandwich cookie pieces.
Bake about 11 minutes - top should be dry to touch.Let cool for a few minutes and enjoy!
