An attractive Marbled Protein Banana Bread made healthy with no oil, butter or sugar! This healthy chocolate swirl protein banana bread uses whole wheat pastry flour, Greek yogurt, protein powder and cocoa powder for all the flavor with no health compromises.
Ingredients
1¼cupMashed Banana, 300g, from 2½ medium
⅓cupUnsweetened Almond Milk, 80ml
⅓cupNon-fat Greek Yogurt, about 75g, Room temperature
2Eggs, Room Temperature
1TbspMaple Syrup, Sugar free recommended below
¾cupWhole Wheat Pastry Flour, 90g, see post for subs
⅓cupUnflavored Protein Powder, 30g, 1 scoop
1TbspBaking Powder
Chocolate:
¼cupChocolate Protein Powder, 22g
3TbspUnsweetened Cocoa Powder
2TbspCoconut Flour, 14g
1tspVanilla Extract
Vanilla:
¼cupVanilla Protein Powder, 22g
3TbspCoconut Flour, 21g
Instructions
Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.
In a large bowl, whisk together mashed banana, almond milk, Greek yogurt, eggs and maple syrup (hand mixer recommended).
In another bowl, whisk whole wheat flour, unflavored protein powder and baking powder.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder and gluten from wheat flour will make the bread dense.
Divide mixture into two bowls.Bowl 1: Add chocolate protein powder, cocoa powder, 2 Tbsp coconut flour and vanilla.Bowl 2: Add vanilla protein powder and 3 Tbsp coconut flour.Gently fold until just combined; Again, DO NOT OVER-MIX.
Add large spoonfuls of batter into pan, alternating to make a pattern.Bake for 55-60 minutes, covering with a foil tent after 40 minutes. A toothpick inserted into center should come out dry.
Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.
