A big and beautiful Single Serve Protein Donut for one made in the air fryer or baked in the oven. Sweetened with protein powder, this healthy single serving donut is a great sugar free dessert, breakfast or post workout treat. Gluten free too!
Ingredients
3Tbsp + 1 tspWhole Wheat Pastry Flour, see post for sub, 25g
½scoopVanilla Protein Powder, Whey-casein, 15g
⅓tspBaking Powder
1tspCold Butter, Grated, 5g
1Tbsp + 2 tspUnsweetened Almond Milk, 27ml
1Tbsp + 2 tspNon-fat Greek Yogurt, 25g
Protein Yogurt Glaze
2tspNon-fat Greek Yogurt, 11g
½tspUnsweetened Almond Milk, 3ml
1tspVanilla Protein Powder, 1-2g
Instructions
Preheat oven to 350°F and line a baking pan with parchment paper.
In a bowl, combine flour, protein powder and baking powder.
Add butter, yogurt and milk - little at a time - and mix with a spoon to until just combined. You should have a smooth dough.
Lightly flour a work surface, transfer dough to surface and knead until smooth - about 10 seconds.DO NOT OVER-MIX or the protein powder will make the donut tough.
Roll into a log about 8” long, shape into a ring, overlap and pinch ends together.
Place on baking sheet and bake for 12-15 minutes.Or spray inside of air fryer basket with cooking spray, place donut in and cook at 325°F for 9-10 minutes.
Transfer to cooking rack to cool completely.
Protein Yogurt Glaze:
In a bowl, whisk together Greek yogurt, almond milk and protein powder.
Use spoon to spread glaze on donut and add toppings.
Notes
Add stevia sweetener if your protein powder is not sweet enough.
