Spot-on Red Velvet Protein Pop Tarts with a Greek yogurt-protein powder filling and frosting, just like the cupcake! Homemade red velvet pop tart is healthy, high protein, sugar free and easily Vegan too!
Ingredients
¼cupOat Flour, 22g, see post for subs
1½TbspChocolate Protein Powder, 8g
1TbspPeanut Butter Powder, 6g
2tspUnsweetened Cocoa Powder, 3-4g
3TbspNon-fat Plain Greek Yogurt, Cold 42g
½tspRed Food Coloring (Liquid)
Filling:
2TbspNon-fat Plain Greek Yogurt, 28g
1TbspVanilla Protein Powder, about 6g
Frosting:
1TbspNon-fat Plain Greek Yogurt, 14g
1½tspZero Calorie 1:1 Powdered Sugar Substitute, or regular, 3g
Instructions
Process oat flour, protein powder, peanut butter powder and cocoa powder in food processor.Add Greek Yogurt and red food coloring and process to form dough ball - about 15 seconds; Stop as soon as ball forms.
Roll dough ball and then into rectangle (about 10”x4”, ¼” thick); Use scrap pieces around edges to make proper shape if needed.Cut into 2 halves (5”x4” each).
Make filling:
In a bowl, whisk Greek yogurt and vanilla protein powder.
Assemble and bake:
Take one dough rectangle and spread filling in the middle (leave about ½” from the edge).
Cover with other rectangle, and seal edges with fork.
Place in air fryer basket and cook at 400°F for 7 minutes.(or bake 425°F for 8-9 minutes, flipping halfway)Let cool for a few minutes.
Frosting:
Stir yogurt and sweetener in a bowl and spread on top of cooled pop tart.
Sprinkle on dough crumbs if any.
