Perfect Soft Protein Pretzel Bites with the crunchy outside and soft inside, but healthy and easy too! Homemade pretzel bites use protein powder and Greek yogurt (no yeast) and are made in the air fryer for a super quick recipe.
Ingredients
¼cup1:1 Gluten Free Baking Flour, 30g
2TbspUnflavored Protein Powder, 11g
1TbspVanilla Protein Powder, 5g
1TbspCoconut Flour, 7g
¾tspBaking Powder
¼cupNon-fat Greek Yogurt, 56g
Baking Soda Bath (for Boiling):
½cupBoiling Water
1TbspBaking Soda
Instructions
Spray inside of air fryer basket with cooking spray.
Process flour, unflavored protein powder, coconut flour, vanilla protein powder and baking powder in food processor.
Add Greek Yogurt and process to form dough ball - about 15 seconds; Stop as soon as ball forms.(Too much will make the dough warm, and protein powder can make pretzels tough)
Divide dough into 2 pieces and roll into balls.
Lightly flour a work surface and roll dough into long ropes, about 10” long each.Cut into bites 1” long.
Bring water to boil in a pot, and add baking soda.Boil bites in water (use spoon to coat, work in batches of 8-10) about 15 seconds.Remove with slotted spoon.
Place dough bites in air fryer basket.Leave sufficient gap and work in batches if needed.
Cook at 375°F for 6 minutes (or bake 400°F for about 8 minutes).
