This Caramel Popcorn Protein Fudge really is a texture explosion! A crunchy fudge but healthy - made with pecan butter and protein powder, and a bit of caramel popcorn. A great no bake recipe.
Ingredients
1cupPecan or Almond Nut Butter, 224g, recommendation below
1scoopVanilla Protein Powder, 30g, ⅓ cup
2scoopsUnflavored Collagen Peptides, about 20g, or oat flour
6TbspCoconut Flour, 36g
1¼cupCaramel Popcorn or Kettlecorn, 10g
Instructions
Line a 8x4” loaf pan with parchment paper (leave an overhang to lift out later).
In a medium bowl, combine the nut butter, protein powder, collagen powder and coconut flour and mix until smooth.Add popcorn and mix again.
Transfer mixture into prepared loaf pan, press down and use back of spoon to smoothen.
Place pan in freezer for about 10 minutes to slightly harden.
Slice into 20 pieces.
