Rich and indulgent Protein Oreo Bread for a healthy and tasty treat! This protein cookies and cream bread has protein powder, Greek yogurt and applesauce, but no sugar, oil, or butter!
Ingredients
1cupUnsweetened Applesauce, 240g
¾cupNon-fat Greek Yogurt, about 168g, Room temperature
⅓cupUnsweetened Almond Milk, 80ml
2Eggs, Room Temperature
2tspVanilla Extract
1cupWhole Wheat Pastry Flour, 120g
½cupChocolate Protein Powder, 45g, Whey-caesin
⅓cupUnflavored Protein Powder, 30g, Whey-caesin, see notes for sub
½cupBlack Cocoa Powder, 42g
¼cupCoconut Flour, 28g
Stevia Sweetener, ¼ cup sugar worth (Use your brand's Conversion Chart)
Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.
In a large bowl, whisk together applesauce, yogurt, almond milk, eggs and vanilla.
In another bowl, whisk whole wheat pastry flour, chocolate protein powder, unflavored protein powder, black cocoa powder, coconut flour, stevia sweetener and baking powder.
Add dry mix to wet, and gently fold until combined.DO NOT OVER-MIX or protein powder and gluten will from wheat flour will make the bread dense.
Add in most of the chopped chocolate vanilla sandwich cookies, reserving a few for the top.Gently fold until combined; Do not over-mix.
Pour batter into prepared loaf pan.Top with more crushed sandwich cookies.
Bake for 40 minutes, cover with foil tent and bake another 20-25 minutes.A toothpick inserted into center should come out dry.
Cool for 15 minutes, then remove from pan and transfer to a wire rack to cool completely, about 40 minutes and cut into slices.
