A lighter, skinny, Protein Sticky Toffee Pudding for a real Christmas treat! Healthy sticky date pudding uses protein powder for sweetness and is actually sugar free outside of the dates. Low fat too!
Ingredients
4Pitted Dates, Medjool preferred, about 3.3oz
½tspBaking Soda
¾cupBoiling Water, 180ml
Pudding:
⅓cupVanilla Protein Powder, Whey-casein, 30g
¼cupUnsweetened Applesauce, 60g
1tspMelted Butter, 5g
½TbspZero Calorie Monkfruit Brown Sugar Substitute, or regular, 6g
1Egg
½cupWhole Wheat Pastry Flour, 60g
¼cupUnflavored Protein Powder, Whey-casein, 22g
1tspBaking Powder
¼tspBaking Soda
⅛tspSalt
Sauce:
1TbspPeanut Butter, 16g
1TbspPeanut Butter Powder, 6g
1TbspVanilla Protein Powder, Whey-casein, 6g
2Tbsp + 1 tspUnsweetened Almond Milk
¼tspVanilla Extract
Instructions
Preheat oven to 350°F and lightly grease a 4 1 cup(8oz) ramekins.
Dates:
Place dates and baking soda in a bowl. Pour boiling water over.
Let stand for 20 minutes.
Chop dates and mix back into water.
Batter:
In a bowl, whisk applesauce and melted butter.Add vanilla protein powder and brown monkfruit sugar, and whisk again.Beat in egg, and then date mixture.
In another bowl, mix flour, unflavored protein powder, baking powder, baking soda and salt.
Add dry mix to wet and fold until combined.
Divide batter among ramekins and smoothen top with back of spoon or spatula.
Bake for 18-20 minutes. Tester inserted should come out clean.
Sauce:
In a bowl, combine peanut butter, peanut butter powder, vanilla protein powder, milk and vanilla extract.
Invert pudding onto plate.Poke holes on top of pudding using skewer, and pour sauce over.
